Baked Eggs in Ham Cups ( makes 2)<br />
-2 lean slices(deli) ham<br />
-1/4 cup egg beaters (divide to make 2 )<br />
-1 wedge of weight watchers jalapeño cheese ( divide wedge in half)<br />
( sautéed mushrooms for no extra points)<br />

Preheat oven to 400<br />
Oil muffin tins with spray or olive oil<br />
Place ham in cups <br />
Pour in egg<br />
Drop in cheese<br />
Voila<br />
Bake 15-20 min depending on your egg choice<br />
Salt in pepper to taste ,scoop out with 2 spoons or ladle<br />

Make for party,brunch or just a quick treat<br />

-6 peaches ,plums, or nectarines. Slice into 1/4 inch thick pieces<br />
-1 1/2 cup ocean spray's Cran Peach juice,apple or white grape<br />
-1-2 cans of diet sprite or 7 up<br />
-1/4 cup orange liqueur (Cointreau)<br />
-1 bottle of Pinot Grigio<br />
Ice cubes for serving<br />

1. In a Lg pitcher combine fruit,juice,liqueur and wine. Refrigerate for at least 4 hrs up to 12<br />
2. Just before serving stir in 7up/sprite. Ladle rink into ice filled glasses with fruit. <br />

-3Tbsp OJ. -1/4 tsp black pepper. -1 cup sliced strawberries<br />
-1Tbsp canola oil. -1/8 tsp table salt. -1/4 cup crumbled semisoftgoat cheese<br />
-2tsp balsamic vinegar -4 cups mixed greens. -2Tbsp salted dry pistachios chopped<br />

In a cup , stir together juice ,oil,vinegar,pepper,and salt and set aside<br />
Arrange mixed greens in a Lg shallow bowl. Top with berries,cheese and nuts. <br />
Just before serving stir dressing and drizzle over salad. Toss gently but well. <br />
1 1/4cup per serving= 3 PP each. WOW!!!!!<br />

1 tablespoon butter<br />
1/2 cup sliced green onions<br />
2 cloves garlic, minced<br />
1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry<br />
1 cup ricotta cheese<br />
1/2 cup sour cream<br />
2 cups shredded Monterey Jack cheese<br />
10 (6 inch) corn tortillas<br />
1 (19 ounce) can enchilada sauce<br />
Directions<br />

Preheat the oven to 375 degrees F (190 degrees C).<br />
Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.<br />
In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.<br />
Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.<br />

When I say tricks I mean not only to my eyes but to my stomach too.<br />
So here are my 3 self deception tactics:<br />
<br />
- First Use the 50,25,25 plate ratio<br />
( 50% veggies,25% meat, 25% carb or starch )<br />
<br />
- Secondly, When ordering in a restaurant ask for a box with ur meal to box up half of your meal before u dig in OR order an appitizer with a side salad(always dressing on side)<br />
<br />
- lastly and most important when serving your own plate use a smaller plate so unfeel like u can fill it up without over doin it!! ie.trickin urself<br />
(I always use a small cereal bowl with a spoon so I can scrape the sides clean leaving nothing behind...lol)<br />
<br />
Use everyday items to compare to portion sizes example<br />
- full deck of cards( including jokers and instructions-heehee)=3oz meat<br />
- a tennis ball= 1 cup of rice<br />
- the full length of a reg light bulb = size of large potato<br />
<br />

Graham Cracker Whoopie's<br />
-8 sheets of low fat honey graham crackers<br />
( break in half to make 16 pieces [8 sandwiches])<br />
-12 tsp of Hersey syrup lite( spread among the 16 pieces)<br />
-8tbsp of fat free cool whip thawed<br />
<br />
Spread chocolate syrup on all pieces and <br />
Put in freezer for 2-3 hrs<br />
Take out and add whip and refreeze for up to 8 hrs.<br />
