Labor day countdown

So with a holiday sneaking up upon us... Here is a 4 day count down with a few ideas/recipes to help !!! This week I will post in hopes to help everyone eat smart!!

Ingredients
15 oz canned turkey chili without beans   
1/2 cup(s) fat-free cream cheese   
  4 oz canned jalapeno peppers, drained and chopped   
  1 small onion(s), finely chopped   
1/2 tsp hot pepper sauce   
Instructions
Combine all ingredients in a saucepan and set over medium heat. Cook, stirring frequently, until well-combined and heated through, about 7 minutes. Yields about 1/4 cup per serving.

EXTRA TIPS
- use a devils egg pan or mini cupcake pan to have serving size already measured out so no guessing
- use carrots,bell peps or celery for no extra points
- make ur own chips outta corn tortillas

Happy Monday friends! Thought I'd share this delish recipe I found.... Mmmmmmm good stuff!
So I will do a little bit better by cutting back on points by using WW/ low fat cheese!

Ingredients

1 tablespoon butter
1/2 cup sliced green onions
2 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
1 cup ricotta cheese
1/2 cup sour cream
2 cups shredded Monterey Jack cheese
10 (6 inch) corn tortillas
1 (19 ounce) can enchilada sauce
Directions

Preheat the oven to 375 degrees F (190 degrees C).
Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.
In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.
Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

A portion is a portion is a portion

I know living here in Louisiana all of our portions are super sized...but here are a few tricks to that have helped me.
When I say tricks I mean not only to my eyes but to my stomach too.
So here are my 3 self deception tactics:

- First Use the 50,25,25 plate ratio
( 50% veggies,25% meat, 25% carb or starch )

- Secondly, When ordering in a restaurant ask for a box with ur meal to box up half of your meal before u dig in OR order an appitizer with a side salad(always dressing on side)

- lastly and most important when serving your own plate use a smaller plate so unfeel like u can fill it up without over doin it!! ie.trickin urself
(I always use a small cereal bowl with a spoon so I can scrape the sides clean leaving nothing behind...lol)

Use everyday items to compare to portion sizes example
- full deck of cards( including jokers and instructions-heehee)=3oz meat
- a tennis ball= 1 cup of rice
- the full length of a reg light bulb = size of large potato

Ok so here it goes... A few friends that I work with suggested I start a blog to share recipes, cooking tips, and food organization. It's not a secret that I joined Weight Watchers over a year ago. After losing over 35 lbs(give or take depending on week ) I am a now a lifetime member and still loving and living it every single day. I will be starting with this fun easy recipe I made last night to share with my girls at salon! Let it be known I don't claim to make up any of these recipes I just tweak to make my own- feel free to do the same.

Graham Cracker Whoopie's
-8 sheets of low fat honey graham crackers
( break in half to make 16 pieces [8 sandwiches])
-12 tsp of Hersey syrup lite( spread among the 16 pieces)
-8tbsp of fat free cool whip thawed

Spread chocolate syrup on all pieces and
Put in freezer for 2-3 hrs
Take out and add whip and refreeze for up to 8 hrs.
1 points plus for each sandwich!!
